Filo Cheese Triangles


You will need:


200g feta cheese
100g cottage cheese
2 tablespoons chopped parsley
1 tablespoon chopped fresh mint
Grated rind of 1 lemon
Freshly ground black pepper
2 free range eggs, beaten
400g filo pastry
100g butter, melted
Sesame seeds to sprinkle



Preheat the oven to 190°C.Lightly grease or line a baking tray with paper.


Using a fork, mash the feta and cottage cheese together. Then add the parsley, mint, lemon rind and black pepper and mix well.


Stir in enough beaten egg so that the mixture is soft but still holds its shape.


Keep the filo pastry covered with a clean slightly damp tea towel while you are working so it doesn’t dry out. Brush a sheet of pastry with melted butter, fold in half lengthwise. Place a heaped teaspoon of filling on the right hand corner of the pastry. Fold the pastry on the diagonal to make a triangle. Then fold this triangle over to make another triangle and continue this down the length of the pastry until you come to the end folding any extra pastry underneath. Repeat this process until all the filling is used up.


Place finished triangles on baking tray, brush with butter and sprinkle with sesame seeds. Bake in the preheated oven for 15-20 minutes or until golden.
