Zucchini Pie
 
 
A great recipe passed around when the garden is overflowing with zucchini. Here’s the original recipe with my variations. Using a food processor with a grater function makes this a quick and easy recipe.
 
You will need:


3 cups grated zucchini
1 onion, peeled and grated
1 ½ cups grated cheese
4 eggs
2 tsp green herbs stock ( I prefer 1 tsp smoked garlic salt and fresh chopped herbs)
¾ cup self-raising  flour( I use self-raising gluten free flour)
Pepper to taste

My variations include
• Adding about 6 chopped sundried tomatoes
• Small cubes of feta
• Substitute some of the zucchini with grated kumara / sweet potato
• Fresh sliced tomato on top
• Diced ham or bacon

 



1. Preheat the oven to 200 degrees C. Grease or line a 20 x 30cm baking dish.
2. Place the zucchini, onion, cheese, eggs and herb stock in a large bowl and mix with a fork.
3. Add the flour and pepper and combine. Pour into the baking dish and smooth out.
4. Bake for 30-40 minutes or until firm and golden..

Serves 4-6
