Spinach Paneer

Paneer is easy to make at home just click here for the recipe.

 

You will need:


2 tablespoons vegetable oil
1 onion, peeled and diced
1 teaspoon sized piece of fresh ginger, peeled and sliced
2 garlic cloves, peeled and crushed
1 chilli, sliced
1 teaspoon cumin seeds
1 teaspoon coriander seeds
½ teaspoon garam masala
 350g spinach (or silver beet)
 250g  potatoes peeled and cut into 1 cm dice
1 cup full cream milk
200g paneer, cut into 1cm dice
1 teaspoon lemon juice


Heat oil in a pan and fry the onion, garlic, ginger, chilli and cumin and coriander seeds for 5 minutes or until onion is soft.


Add garam masala and spinach and cook until spinach has wilted.


Remove from pan and puree in a blender or food processor. Set aside.


Add the potato and milk to the pan. Cover and bring to the boil and simmer gently until potato is tender.


Return the spinach mixture to the pan and season well with salt. Add the paneer and heat gently until hot.


Serve with rice and Indian breads.
