Sweet and Saucy Lamb Shanks

Lambs shanks are a great in the pressure cooker saving you hours of slow cooking.

You will need:

2-3 tablespoons olive oil

4-6 lamb shanks

2 garlic cloves, crushed
1 tablespoon diced fresh ginger
2 celery stalks finely diced
½ cup cider or white wine vinegar
1 tablespoon tomato paste
3 tablespoons soy sauce
1/3 cup brown sugar
1 tsp dried chilli flakes ( not super hot)
salt and pepper
1 cup hot water
2 carrots, sliced
6 pickling onions
1 tablespoon cornflour



 Heat the pressure cooker over a medium to high heat and add the oil. Brown the shanks in batches removing from the pan and setting aside.

 Add extra oil if required and sauté the garlic, ginger and celery. Return the shanks to the pan.

 Mix together the vinegar, tomato paste, soy sauce, sugar, chilli and seasoning then pour this over the shanks with the hot water.

 Set to high pressure (2). Bring up to pressure and maintain that pressure for 40 minutes. Remove from heat and release pressure using the quick release method.


Open the pressure cooker and move the shanks around and then add the onions and carrots. Return to the heat and bring up to high pressure and cook for a further 15 minutes. Allow pressure to reduce naturally.

Open pressure cooker thicken if desired with corn flour dissolved in ¼ cup cold water. Serve with creamy mashed potatoes.
