Gluten Free Apple & Almond Cake


This delicious gluten free cake is sugar free and uses just honey for sweetness. I added some red guava pulp when stewing my apple and the cake was a pretty pink colour.


You will need:


2 granny smith apples, peeled, cored and sliced

50g butter

8 tablespoons honey

1 free range egg

1 cup ground almonds

½ cup gluten free flour

1 teaspoon gluten free baking powder

1 cup stewed apple pulp





Preheat oven to 160 °C. Line a 20cm square cake tin with baking paper.


Place sliced apples in base of cake tin. Beat butter and honey until smooth. Add egg and beat well. Fold in almonds, sifted flour and baking powder. Lastly fold through apple pulp.


Place dollops over the sliced apples. Bake for 45 minutes or until a skewer inserted in the middle of the cake comes out clean.


Allow to cool and turn upside down on a serving plate and serve with cream or yoghurt.
