German Apple Cake – Gluten Free options

 

You will need:

 

175g butter, softened

1 cup sugar

1 teaspoon vanilla essence

4 free range eggs

2 cups flour or gluten free baking flour

3 teaspoons gluten free baking powder

½ cup milk

2 apples, peeled, cored and quartered

1 tablespoon sugar, extra

1 teaspoon cinnamon

Line a 22cm cake pan with baking paper and preheat the oven to 160°C.

 Beat butter, sugar and vanilla together until light and creamy. Add eggs and beat well. Sift in the flour and baking powder. Lastly fold in enough milk to make a soft batter.

Pour the batter into the cake tin. Cut slits into the apple quarters to make fins then place the apples on the cake batter.

Mix together the cinnamon and sugar and sprinkle this over the cake before placing in the oven to bake for 60 minutes or until a cake tester inserted into the cake comes out clean.
