Apple & Choko Free Form Pie

 

Because chokos take on the flavours of the food around it and it has the texture of apple it makes a great apple extender in dishes.

 

You will need:

 

1 choko, peeled, cored and diced

4 apples, peeled, cored and diced

1-2 teaspoons mixed spice

¼ cup water or fruit juice

¼ cup sultanas

1 tablespoon honey (optional)

2 sheets frozen ready rolled pastry, thawed

 


 

Place choko, apples, spice, water and sultanas in a saucepan. Gently simmer over a medium heat until apple and choko are tender. Remove from heat and sweeten with honey if wished.

 

Preheat the oven to 220°C and line a tray with baking paper. Sit the pastry on the tray and divide the apple mixture between pies sitting it in the centre of the pastry. Loosely fold any excess pastry over the apple.

 

Brush exposed the pastry with a little milk and bake in the lower part of the oven. Bake for 20-25 minutes or until pastry is golden and the base is cooked.

 

Tip: If the top gets too brown before it has finished baking cover top with foil until base is cooked.
