Baked Apples with Dates and Nuts

 

You will need:

 

4 apples

½ cup roughly chopped dates

¼ cup roughly chopped nuts

1 teaspoon mixed spice

 


 

Core apples with and apple corer or a sharp knife.

 

Mix the dates and nuts together with the mixed spice.

 

Place the apples in an ovenproof dish which fits easily inside your pressure cooker, then stuff the fruit and nut mixture down centre cavity.

 

Place a trivet inside the pressure cooker and pour in 1 cup or hot water. Cover the dish with foil and using a sling lower the dish into the pressure cooker. Bring up to high pressure then maintain  this pressure for 15 – 20 minutes depending on the size of apples you used.

 

No pressure cooker?

 

Bake in an oven preheated to 180°C for 50 minutes or until apples are tender.

 

Serve with custard or cream.
