Beef Stroganoff 

 

You will need:

 

Here's a recipe for beef stroganoff which uses cheaper stewing steak. The beef becomes tender and full of flavour when cooked in the pressure cooker.

 

600g beef stewing steak, diced e.g. blade, skirt.

2 tablespoons plain flour

salt and pepper

1-2 tablespoons olive oil

1 onion, peeled and sliced

2 garlic cloves, crushed

2 teaspoons smoked paprika

2 bay leaves

1 -1 ½ cups liquid beef stock

150g button mushrooms, halved

2 tablespoons tomato paste

½ cup sour cream

 


 

Toss beef in seasoned flour. Heat the pressure cooker over a medium to high heat and add the oil. Brown beef in 2 batches and remove from pan and set aside.  Sauté the onion and garlic (add extra oil if required).

 

Return beef to the pan and add the remaining ingredients, except the sour cream. Put on the pressure cooker lid and lock it into place. Set to high pressure (2). Bring up to pressure and maintain that pressure for 30 minutes. Remove from heat and allow pressure to reduce naturally.

 

Open pressure cooker, stir through the sour cream and serve on rice or egg noodles.

 

Serves 4-6

 

Tip: Sometimes the tomato paste can stick to the bottom of the pan, to prevent this add the tomato paste last and sit on top of the ingredients and stir through at the end of the cooking.
