Couscous Salad


You will need:


2 cups water

2 tablespoons olive oil

½ - 1 teaspoon salt

2 cups couscous

2 teaspoons butter or olive oil

¼ telegraph cucumber, de-seeded and diced

2 tomatoes, skinned, de-seeded and diced

2 spring onions, sliced

¼ cup pinenuts, toasted

¼ cup chopped fresh parsley

¼ cup chopped fresh coriander leaves

Grated rind and juice of 1 lemon

freshly ground black pepper

1 chilli, de-seeded and finely diced (optional)



Place water, oil and salt in a saucepan and bring to the boil.


Remove from the heat, pour in the couscous and stir. Cover set aside for 2-3 minutes.


Add the butter or olive oil and fluff the couscous with a fork.


When cool toss through the remaining ingredients and serve.
